Day 1- Egg Nog Fudge

This stuff is SO yummy (and easy too)! Just be careful how much you give your kiddos because Brynlee ate like 17 pieces and was throwing  up for 2 days!

You will need:

2 cups white sugar
1/2 cup salted butter
3/4 cup dairy Egg Nog
10.5 white chocolate bars chopped into small pieces
1/2 teaspoon freshely grated nutmeg, and a little more for the top
One 7- ounce jar of marshmallow cream
1 teaspoon of rum extract

1. Line a 8 or 9 inch square pan with foil. Let the foil hang over the sides. Butter the foil.

2. In a saucepan, combine sugar, butter and egg nog. Bring to a boil, stirring constantly. Continue boiling 8 to 10 minutes on medium heat or until candy reaches 234 degrees F, stirring constantly to prevent from scorching. Remove from heat.

3. Using a wooden spoon, work quickly to stir in nutmeg and white chocolate pieces until chocolate is creamy and smooth. Stir in marshmallow cream and rum extract. Beat until well blended then pour into prepared pan. Sprinkle a little nutmeg on top. Let stand until cool, refrigerate for a faster cooling.

4. When cooled, cut into square pieces and store in a covered container. Enjoy!
